Thai Salmon in Phyllo

Ingredients

  • 4 sheets phyllo pastry
  • 1 oz. butter
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • 1 green onion; finely chopped
  • 1 Tablespoon fresh coriander, finely chopped
  • 1 lime; zest and juice
  • Salt & pepper
  • 2 salmon filets

Instructions

  1. Preheat oven to 350°F. Grease a cookie sheet with nonstick vegetable spray or olive oil and set it aside.
  2. In a bowl mix together the lime zest and juice, garlic, spring onion, ginger and coriander. Set the mixture aside.
  3. Melt the butter or margarine. Lay out 1 sheet of phyllo, and brush with butter. Lay second sheet on top, brush with more butter.
  4. Lay a salmon fillet about 2-3 inches from short side of pastry, season to taste and put half of lime mixture on top.
  5. Fold the short end of pastry over the salmon, then fold in the 2 long sides. Fold the salmon over twice more, and cut off the remaining pastry. Do the same with the other fillet.
  6. Put the parcels on a well-greased baking sheet, and just before baking brush with the remaining butter or margarine.
  7. Cook for 20 to 25 mins, or until brown and crispy.
