Salmon Loaf
This recipe is kosher for Passover.

Ingredients
  • 2 (7 oz.) cans salmon
  • 2 eggs
  • ½ onion, diced
  • ½ cup matzah meal
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder
  • 1 Tablespoon lemon juice

Instructions
  1. Put 2 Tablespoons oil in frying pan and sauté onions until lightly browned.
  2. Put rest of ingredients in bowl and add onions with the oil. Pack into a greased loaf pan.
  3. Bake at 350°F for 45 minutes or until top is lightly browned.
