Peachy Chicken Salad
Peachy Chicken Salad Meat
Serves 4 to 6


1/3 cup mayonnaise

1 cup seedless red grapes, halved

2 tablespoons non dairy creamer

1 cup frozen tiny peas, thawed

1/2 teaspoon salt

2 large peaches, peeled and chopped

1/4 teaspoon pepper

1 cup pecan halves, toasted

1/4 TO 1/2 teaspoon tarragon

Lettuce leaves

2 1/2 cups cubed cooked chicken


In a large bowl, stir the mayonnaise, non dairy creamer, salt, pepper and tarragon until smooth. Add chicken and toss to coat. Stir in the grapes, peas, peaches and pecans. Serve in a lettuce-lined bowl. Serves 4 to 6.
