Vegetarian Chopped Liver
This recipe is kosher for Passover.

2 onions, chopped

¼ lb mushrooms, chopped

3 tbsp oil

3 hard-cooked eggs

¼ lb shelled walnuts

1 tsp salt


Heat oil in frying pan.  Add onions and mushrooms, sauté until onions are browned (about 8 – 10 minutes).  Put into food processor with chopping blade, then add eggs, walnuts and salt.  Process until no large pieces are left.  Scrape into a bowl and chill several hours or overnight…

Serve on lettuce leaves, with sliced tomatoes.
