Tropical Garbanzo Bean Salad
Tropical Garbanzo Bean Salad Eileen Goltz | Pareve

makes 6 servings

2 (15 ounce) cans of garbanzo beans, drained

1 green bell pepper, chopped

1 red bell pepper, chopped

1 cup of diced sweet yellow onion

1 cup of cherry or grape tomatoes

2 cups shredded lettuce

1/4 cup of freshly squeezed lime juice

1/4 cup of olive oil

1 teaspoon of ground cumin

1/2 teaspoon of sea salt

1/2 teaspoon of black pepper

3 minced garlic cloves

10 black olives

1/2 cup chopped parsley


In a large wooden salad bowl combine the red and green peppers, lettuce, onion, tomatoes, olives, garbanzo beans and chopped parsley

In a blender combine the lime juice, olive oil, minced garlic, cumin, salt and pepper. Pour the dressing over the garbanzo bean mixture. Cover and refrigerate for an hour or so. Serves 6
