Sliced Beet Casserole

4 to 6 servings

  • 4 cups sliced cooked beets
  • 2 Tablespoons butter or margarine
  • 1 Tablespoon flour
  • 2 Tablespoons brown sugar
  • 3 Tablespoons vinegar
  • ¼ cup boiling water
  • ½ teaspoon salt
  • ¼ teaspoon paprika
  • ¼ teaspoon cinnamon
  • ⅛ teaspoon nutmeg
  • ⅛ teaspoon cloves

  1. Preheat oven to 350°F. Place beets in greased 1-1/2-quart casserole.
  2. In a sauce pan melt the butter; blend in the flour and sugar. Add the vinegar and boiling water. Cook, stirring constantly, until bubbling. Add the salt, paprika, cinnamon, nutmeg and cloves. Mix to combine. Pour the mixture over the beets.
  3. Cover the casserole and bake for 25 minutes.
