Pumpkin Chocolate Chip Muffins

Ingredients
  • 3 cups sugar
  • 1 teaspoon salt
  • 1 cup oil
  • 1 teaspoon baking soda
  • 2 eggs
  • 1 teaspoon nutmeg
  • 1 can of pumpkin (1 lb.)
  • 1 tablespoon cinnamon
  • 3 cups of flour
  • ¼ teaspoon ginger
  • ¼ teaspoon allspice
  • 8 to 12 oz. chocolate chips (miniature or regular)

Instructions
  1. Preheat oven to 375°F.
  2. In the bowl of an electric mixer combine the sugar, oil, eggs, Mix to combine.
  3. Mix dry ingredients separately; then add slowly to wet ingredients. Stir in chocolate chips.
  4. Grease muffin pan and fill cups 2/3 full.
  5. For full-size muffins bake at 375°F for 20 to 25 minutes.
    For mini muffins bake at 350°F for 15 minutes.
