This recipe is kosher for Passover.

- 5 medium potatoes
- 1 onion, chopped
- 1 rib celery, chopped
- ¼ cup oil
- 2 eggs
- Salt and pepper
- Peel potatoes. Grate in food processor or with hand grater.
- Heat oil in small frying pan and sauté onions and celery until browned.
- Put eggs and potatoes in a bowl. Add onion mixture, salt and pepper. Mix well.
- Stuff chicken or bake in greased casserole separately at same temperature as chicken, spooning some chicken liquid over stuffing as it bakes.
