Potato Stuffing
This recipe is kosher for Passover.

  • 5 medium potatoes
  • 1 onion, chopped
  • 1 rib celery, chopped
  • ¼ cup oil
  • 2 eggs
  • Salt and pepper

  1. Peel potatoes. Grate in food processor or with hand grater.
  2. Heat oil in small frying pan and sauté onions and celery until browned.
  3. Put eggs and potatoes in a bowl. Add onion mixture, salt and pepper. Mix well.
  4. Stuff chicken or bake in greased casserole separately at same temperature as chicken, spooning some chicken liquid over stuffing as it bakes.

Remember to make an Eruv Tavshilin!
