Potato Kugel
This recipe is kosher for Passover.

6 to 8 servings

  • 8 to 10 potatoes (Yukon gold or other)
  • 2 onions
  • 4 eggs
  • 2 cloves garlic
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ cup oil

  1. Shred potatoes, garlic and onions in food processor or with hand grater.
  2. Put oil in baking pan (casserole dish or foil “lasagna” pan). Heat in oven while mixing ingredients.
  3. Put shredded potatoes, garlic and onions in large bowl. Add salt pepper and eggs.
  4. Pour 2 Tablespoons of hot oil into mixture. Blend well and pour back into hot pan.
  5. Bake at 400°F for about 45 minutes or until browned.
