Pesach Double Chocolate Muffins
This recipe is kosher for Passover.

  • ½ cup matzah cake meal
  • 6 Tablespoons potato starch
  • ¾ cup sugar
  • ¼ cup cocoa
  • ¼ teaspoon salt
  • 2 teaspoons baking powder*
  • 1 teaspoon baking soda
  • ⅔ cup nonfat yogurt
  • ⅔ cup milk
  • 1 egg, lightly beaten
  • 1 package vanilla sugar or 1 teaspoon vanilla
  • 1 cup chocolate chips

  1. Mix together dry ingredients.
  2. Mix together wet ingredients.
  3. Blend the two mixtures just till moistened. Fold in chocolate chips.
  4. Place in oiled or nonstick muffin tins.
  5. Bake about 15 minutes at 400°F or till they test done with a toothpick.

NOTE: If you can’t get kosher for Passover baking powder, there is a substitution using 1/4 teaspoon baking soda and 1/2 teaspoon cream of tartar.

Remember to make an Eruv Tavshilin!
