Orange Date Gingerbread Cake

Ingredients
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt (optional)
  • ½ teaspoon ginger
  • ½ teaspoon cloves
  • ½ cup chopped dates
  • 2 eggs
  • ¼ cup oil
  • ½ cup orange juice
  • ½ cup milk
  • 1 cup maple syrup

Instructions
  1. Preheat oven to 350°F. Grease a 9X13 baking pan and set it aside.
  2. In a bowl combine the flour, baking powder, baking soda salt, ginger and cloves. Mix to combine and add the dates. Mix to combine.
  3. In another bowl combine the eggs, oil, juice, milk and syrup. Mix to combine and add the mixture to the flour mixture.
  4. Pour the mixture into the prepared pan and bake for 30 to 40 minutes.
  5. Serve warm or at room temp.

This cake is great dusted with powdered sugar.
