Oatmeal Peanut Butter Chocolate Chip and Pecan Cookies

Ingredients
- 6 eggs
- 2 cups granulated sugar
- 2 cups packed brown sugar
- 2½ cups chunky peanut butter
- 1 cup butter or margarine, softened
- 4 teaspoons baking soda
- 2 teaspoons vanilla
- 8 cups oats
- 2 cups semisweet chocolate pieces
- 1 cup chopped pecans
Instructions
- Preheat oven to 350°F. Grease 2 cookie sheets.
- In a large mixing bowl beat eggs and then add the sugar and brown sugar, peanut butter, baking soda and vanilla. Mix to combine.
- Stir in oats, chocolate chips and pecans and mix thoroughly.
- Drop by heaping tablespoons onto prepared cookie sheet. Flatten each cookie slightly with the bottom of glass dipped in sugar.
- Bake for 12 to 14 minutes. Cool cookies slightly before removing them from cookie sheets.
- Cool completely before storing.
