Oatmeal Peanut Butter Chocolate Chip and Pecan Cookies

Ingredients

  • 6 eggs
  • 2 cups granulated sugar
  • 2 cups packed brown sugar
  • 2½ cups chunky peanut butter
  • 1 cup butter or margarine, softened
  • 4 teaspoons baking soda
  • 2 teaspoons vanilla
  • 8 cups oats
  • 2 cups semisweet chocolate pieces
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 350°F. Grease 2 cookie sheets.
  2. In a large mixing bowl beat eggs and then add the sugar and brown sugar, peanut butter, baking soda and vanilla. Mix to combine.
  3. Stir in oats, chocolate chips and pecans and mix thoroughly.
  4. Drop by heaping tablespoons onto prepared cookie sheet. Flatten each cookie slightly with the bottom of glass dipped in sugar.
  5. Bake for 12 to 14 minutes. Cool cookies slightly before removing them from cookie sheets.
  6. Cool completely before storing.
