  • 3 cups flour
  • 2 teaspoons cinnamon
  • 2 teaspoons soda
  • 1 teaspoon salt
  • 1 cup oil
  • 4 eggs
  • 1½ cup honey
  • 3 cups grated carrots
  • 3 cups chopped pecans

    Honey Cream Cheese Frosting:
  • 8 oz. cream cheese, softened
  • ⅓ cup honey
  • 1 teaspoon vanilla

  1. Preheat oven to 350°F.
  2. In a bowl sift together the flour, cinnamon, baking soda and salt. Add the oil, honey and eggs; mix well. Fold in carrots and nuts.
  3. Bake for 30 minutes or more in two layer pans.
    Baking time will increase if you use a bunt pan.
  4. Cool and frost with the honey cream cheese frosting or dust with powdered sugar.

    Honey Cream Cheese Frosting:
  5. Combine all the ingredients in a food processor or blender and blend until smooth. Frost the cake while warm.
