Fruit Meringue Kugel for Passover

Fruit Meringue Kugel for Passover Eileen Goltz | Pareve

Ingredients
  • 3 matzahs, broken into very small pieces
  • 2 cups apple juice
  • 1 Tablespoon lemon juice
  • 2 Tablespoons lemon rind, grated
  • 3 Tablespoons margarine, melted
  • 1 teaspoon vanilla
  • ¼ cup sugar
  • 1 egg
  • 2 egg yolks
  • ¼ teaspoon salt
  • ½ cup chopped pecans
  • ½ cup sliced apples or pears

    Meringue:
  • 2 egg whites
  • ¼ cup sugar

Instructions
  1. Preheat oven to 350°F. Grease a 9-inch square baking dish.
  2. In a bowl, let the matzah soak in apple juice for 15 minutes.
  3. Add lemon juice, lemon rind, margarine, vanilla, sugar, whole egg, yolks and salt; mix to combine.
  4. Spoon the mixture into the greased baking dish; top with sliced fruit and nuts.
  5. Bake for 25 minutes.

    Meringue:
  6. Beat egg whites until foamy; gradually beat in 1/4 cup sugar until soft peaks form.
  7. Cover fruit mixture with meringue; bake another 15 minutes or until the top is golden.
  8. Serve warm.
