(After the chicken soup comes the chicken salad)
- 1 cooked chicken
- ¼ cup vinegar or lemon juice
- ¼ cup oil
- 2 teaspoons chopped onion
- 1 rib celery, diced
- ¾ cup mayonnaise
- Salt and pepper
- 1 hard-cooked egg, diced (optional)
- Cut chicken in bite-sized pieces and place in bowl.
- Add rest of ingredients and mix well.
- Serve on bed of lettuce.
Variations: You can add ½ cup chopped walnuts and/or 1 apple, diced; OR you may add ½ cup seeded, peeled and diced cucumber.
