Chicken Salad
This recipe is kosher for Passover.

6 servings

(After the chicken soup comes the chicken salad)

  • 1 cooked chicken
  • ¼ cup vinegar or lemon juice
  • ¼ cup oil
  • 2 teaspoons chopped onion
  • 1 rib celery, diced
  • ¾ cup mayonnaise
  • Salt and pepper
  • 1 hard-cooked egg, diced (optional)

  1. Cut chicken in bite-sized pieces and place in bowl.
  2. Add rest of ingredients and mix well.
  3. Serve on bed of lettuce.

Variations:  You can add ½ cup chopped walnuts and/or 1 apple, diced; OR you may add ½ cup seeded, peeled and diced cucumber.

Remember to make an Eruv Tavshilin!
