Cheese Puff(s)
This recipe is kosher for Passover.

6 cheese puffs

  • 6 medium potatoes
  • ½ cup milk
  • 2 Tablespoons butter or margarine
  • 2 cups (½ lb.) grated Swiss or other cheese
  • 1 teaspoon onion powder
  • 2 Tablespoons chopped parsley

  1. Peel potatoes and cut into cubes. Put into saucepan and cover with water; add 1 teaspoon salt.
  2. Bring to a boil and cook for about 20 minutes or until soft.
  3. Drain and mash with milk and butter.
  4. Beat egg whites until stiff. Mix egg yolks, one at a time, with mashed potatoes.
  5. Stir in cheese, onion powder and parsley. Fold in egg whites.
  6. Spoon into greased 2-quart casserole.
  7. Bake at 375°F for 40 minutes or until puffed and golden.

Remember to make an Eruv Tavshilin!
