Carnival Carrot Salad
Carnival Carrot Salad Eileen Goltz | Pareve


4 large carrots, grated
1/3 cup currents
1/2 cup chopped celery
3 to 4 Tablespoon mayonnaise 1/3 cup pineapple juice
3 teaspoon cinnamon
1/2 teaspoon nutmeg


Mix all ingredients together in a large bowl, cover and chill for at least 1 hour. Serve on individual plates on salad greens. This can be doubled or tripled.

Serves 4.
