Carnival Carrot Salad
This recipe is kosher for Passover.

  • 4 large carrots, grated
  • ⅓ cup currants
  • ½ cup chopped celery
  • 3 to 4 Tablespoons mayonnaise
  • ⅓ cup pineapple juice
  • 3 teaspoon cinnamon
  • ½ teaspoon nutmeg

  1. Mix all ingredients together in a large bowl.
  2. Cover and chill for at least 1 hour.
  3. Serve on individual plates on salad greens.

This recipe can be doubled or tripled.

Remember to make an Eruv Tavshilin!
