Broccoli and Rice Quiche
Broccoli and Rice Quiche Dairy
Serves 6

You can use reduced-fat Swiss cheese and skim milk to eliminate some of the calories


1-1/2 cups milk
3 eggs
1 Tablespoon Dijon mustard
1/4 cup finely chopped onion
3/4 cup shredded Swiss cheese
One 2-ounce jar diced pimentos, drained
1/1/2 cups fresh broccoli
3/4 cup instant brown or white rice


Heat oven to 350. Spray a 9-inch pan with nonstick cooking spray. In a large saucepan, heat milk until very hot but not boiling. Meanwhile, in a small bowl, beat the eggs and mustard until well blended. Add the onion, cheese, and pimentos; mix well. Stir the broccoli and rice into the hot milk. Slowly add the egg mixture to the milk mixture, stirring constantly. Pour the mixture into the sprayed pan. Bake for 30 to 35 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving. Serves 6.
