Barley Apricot Tzimmes

Ingredients
  • 4 cups boiling water
  • ¾ cup dried apricots
  • 1 cup egg barley
  • ½ cup honey
  • ¼ cup oil
  • 1 teaspoon salt

Instructions
  1. In a pot, pour boiling water over the apricots; cover and soak for 1 hour.
  2. Place the pot over medium heat and bring to a boil. Stir in egg barley, honey, oil and salt. Pour into a 2 quart casserole.
  3. Bake, covered, at 375°F for 45 minutes; uncover and bake another 15 minutes.
  4. Serve warm.
