Reliable Frozen Tuna Supply from Indonesia: Meet PT Lautindo

PT Lautindo Sejahtera, an Indonesian frozen pre-cooked tuna processor based in Muncar, Banyuwangi, East Java, is OU Kosher certified for frozen pre-cooked tuna loins and shredded tuna. We spoke with Ayu Lestari, who walked us through the company’s operations, customer base, seasonal sourcing strategy, and what makes PT Lautindo different from its competitors.

Editor’s note: We caught Ayu in early May, just as Banyuwangi’s rainy season was winding down. The wet season in East Java runs roughly November through April — about six months of consistent rainfall, peaking in December and January — before giving way to the dry season that carries through October.

OU Kosher: Tell us about PT Lautindo.

Ayu Lestari: We were established in May 2016 and we are located in Muncar, Banyuwangi, East Java, Indonesia. We are a manufacturer producing frozen pre-cooked tuna — both loins and shredded. Our OU Kosher certification covers frozen pre-cooked loins and shredded tuna.

Sourcing & Supplier Verification

OU Kosher: Do you do the fishing yourselves, or do you source the raw material?

Ayu Lestari: Just the processing. We don’t have boats. We buy the raw material from many suppliers across Indonesia — from small suppliers, larger vendors, and directly from fishermen. The fishing methods include purse seine, pole and line, hand line, troll line, and longline.

OU Kosher: How do you verify what your suppliers are doing?

Ayu Lestari: Our suppliers provide documentation — catch certificates, captain’s statements, vessel licenses, fishing licenses, and personnel licenses. They declare the fishing details and facility information, so we can verify each raw material lot against the supporting documents before it enters our process.

Why OU Kosher

OU Kosher: Why does PT Lautindo carry OU Kosher certification?

Ayu Lestari: Because our buyers request it. For example, we ship to Thailand, and our Thai buyer then ships finished product on to end buyers in America and Europe. OU Kosher gives those downstream customers the certification they need.

Markets Served

OU Kosher: Which markets do you serve today?

Ayu Lestari: ASEAN, Japan, Taiwan, the Middle East, Libya, Egypt, Peru, Ecuador, and Mexico. We can’t currently export directly to the U.S. or Europe because we don’t yet have an EU number — the export approval number — since our government’s registration process is closed. We are working on Russia and Turkey registration now.

Managing Seasonality

OU Kosher: How do you manage tuna seasonality?

Ayu Lestari: Different species, different seasons. Yellowfin tuna’s peak season is May through October. Skipjack peaks August through November. Right now skipjack is in a low period, so we are focusing production on yellowfin. The factory stays open year-round; we adjust the species mix to match what’s being caught.

Cleaning Grades

OU Kosher: What does your cleaning process look like?

Ayu Lestari: We offer single cleaning and double cleaning. Single cleaning meets standard quality; double cleaning produces a premium product with a very clean white loin. Japanese buyers typically request double cleaning for canned tuna and premium pet food. Our kosher buyers usually request single cleaning.

In-House Lab

OU Kosher: What lab capability do you have in-house?

Ayu Lestari: We run a comprehensive in-house laboratory. Chemical testing covers pH level, salt content, moisture, heavy metals, and histamine analysis, and microbiological testing covers coliform, salmonella, total plate count (TPC), and E. coli. We test the raw material on intake and the finished product on completion, and we share results with our buyers. Customers visit our factory and see the production and lab firsthand.
