Fruit Meringue Kugel for Passover (pareve)

Ingredients

3 matzo, broken into very small pieces

2 cup Apple juice

1 tablespoon lemon juice

2 tablespoon lemon rind, grated

3 tablespoon margarine, melted

1 teaspoon vanilla

1/4 cup Sugar

1 Egg, whole

2 Egg yolks

1/4 teaspoon Salt

1/2 cup chopped pecans

1/2 cup sliced apples or pears


Meringue:

2 Egg whites

1/4 cup Sugar



Instructions

Preheat oven to 350. Grease a 9 inch square baking dish. In a bowl let the matzos soak in apple juice for 15 minutes. Add lemon juice, lemon rind, margarine, vanilla, sugar, whole egg, yolks and salt. Mix to combine. Spoon the mixture into the greased baking dish. Top with sliced fruit and nuts. Bake for 25 minutes. Make meringue by beating egg whites until foamy; gradually beat in 1/4 cup sugar until soft peaks form. Cover fruit mixture with meringue; bake another 15 minutes or until the top is golden. Serve warm.
