In 1986 Charles Matsko made specialty cookies in West Middlesex, PA, which are hand crafted from original Eastern European recipes. Knowledge of Charlie’s cookies spread and in 1991 a modern production plant was built at their current Hermitage, PA location. Subsequent additions were made to the production, frozen warehouse and dry warehouse spaces in this fully kosher facility. Product is flash frozen in blast freezers to preserve freshness making product available in either raw, frozen or thaw and sell state. From traditional cream cheese or fruit filled cookies, to Rugelach, Roszki and Kolachi, plus gourmet items, Hamantaschen, Spice Cake, Brownies, Apple Dumplings and Bobb Wafers, Charlie’s product line will add high quality as well as high margin to any bakery case. In 1997, Charlie’s became a subsidiary of the Byrnes & Kiefer Company of Callery, Pa. Charlie’s is also fully positioned to manufacture for any supermarket or restaurant chain that wishes to add a “Specialty” to their line.
