All OU Kosher-certified companies are familiar with the \u2018Schedule A\u2019 document. This document\u00a0serves as an \u2018approved supplier list\u2019 for ingredients used in a kosher product or one that shares\u00a0equipment with kosher product.<\/p>\n

However, unlike a standard \u2018approved supplier list,\u2019 the Schedule A may offer more information\u00a0to permit alternative ingredients or provide further restriction on already approved ingredients.\u00a0Proper reading of this document is crucial to absolving your company from the liability of using\u00a0non-approved ingredients.<\/p>\n

The Schedule A has various components: 1- the ingredient name; 2- the ingredient supplier; 3-\u00a0dairy or pareve status; 4- kosher symbol requirements (\u201cGroup\u201d); 5- specific requirements for\u00a0that ingredient.<\/p>\n

Let us explain:<\/p>\n

1. The first component is \u2018ingredient name.\u2019 The name printed on the ingredient that your\u00a0company receives must exactly match the name listed on Schedule A. Any additional letters or\u00a0numerals on the product you received or on Schedule A do NOT constitute an exact match. The\u00a0Schedule A listing would not permit that ingredient.<\/p>\n

2. The \u2018ingredient supplier\u2019 must also be an exact match. Although the ingredient may be\u00a0approved from one supplier, the identical ingredient may be non-kosher when coming from a\u00a0different supplier.<\/p>\n

3. The ingredient \u2018pareve\/dairy status\u2019 is crucial because it informs you how an ingredient may\u00a0be used. A dairy ingredient may not be used in a pareve-certified product. That means that when\u00a0a product is labeled with an OU, no ingredients may contain dairy. In addition, unless approved\u00a0by the OU, a dairy ingredient may not be used on equipment dedicated for pareve production,\u00a0even if an allergy cleaning is performed after the dairy production.<\/p>\n

4. \u2018Kosher symbol\u2019 requirements inform you whether or not a kosher symbol must be affixed to\u00a0the packaged ingredient to be approved for receiving at your facility. A Group 3 requires the\u00a0symbol whereas a Group 1 or 2 does not. Your Schedule A also lists other group numbers, 4-6,\u00a0and what they mean.<\/p>\n

5. The \u2018specific requirement\u2019 is perhaps the most confusing part of the document and therefore\u00a0will be explained further.<\/p>\n

Example #1<\/p>\n

\"Screen<\/a><\/p>\n

This bulk cottonseed oil is approved; however the stipulation requires that the means of\u00a0delivery also be approved by the OU. In general, this stipulation applies to most food grade bulk\u00a0liquids and this can be discussed further with your account manager (RC) at the OU.<\/p>\n

Example #2:<\/p>\n

\"Screen<\/a><\/p>\n

This basil leaf is approved from any source; however since the USDA permits more bugs in live produce\u00a0than kosher regulatory standards, a rabbi must be present to inspect the leaves before usage.<\/p>\n

Example #3:<\/p>\n

\"Screen<\/a><\/p>\n

This Papaya does not require a kosher symbol. However, it must have the special six-digit K-code on\u00a0the certificate of analysis. Should this code be missing, the ingredient is not approved for use.<\/p>\n

These are just a few examples of the various stipulations that are on Schedule A. Please familiarize\u00a0yourself with the stipulations on your company\u2019s Schedule A to verify that you are in compliance\u00a0with all the requirements.<\/p>\n

The details on Schedule A are as important as the ingredient name itself when it comes to protecting\u00a0your company from liability. Best practices would encourage incorporation of Schedule A and its\u00a0requirements into your company\u2019s general approved supplier list.
