ZUCCHINI AND PEPPER SLAW (pareve)

Ingredients

2 green zucchinis
2 yellow zucchinis
1 red pepper
4 green onions
1 banana pepper; slivered DRESSING-
1 teaspoon garlic, minced
2 teaspoon Dijon mustard
1/2 teaspoon honey
2 tablespoons wine vinegar
1/3 cup olive oil
Salt and pepper to taste


Instructions

With shredder blade of food processor, shred zucchini into long strips (you can cut them by hand if you prefer). Set them aside in a bowl. Sliver the red pepper and green onions and add them to zucchini. (Add the optional banana pepper for a spicy flavor.) In a small bowl whisk together garlic, mustard and honey. Then add the wine vinegar and olive oil and whisk to combine. Mixture should be quite thick. Season with salt and pepper. Just before serving, toss vegetables with vinaigrette.
