Ingredients12 sweet potatoes*

Instructions
Bake the sweet potatoes in a preheated 400 oven until soft. Peel and mash with 6 tablespoons of butter or margarine and 1 tablespoon of rum. Set the mixture aside until needed. Melt the remaining 2 tablespoons of butter or margarine in a saute pan. Add the sugar and stir until the sugar is melted and begins to bubble. Add the grapefruit and saute until the liquid is reduced by about 1/2. Add the grapefruit juice and the remaining 2 tablespoons of rum. Cook for 1 minute. Add the fruit mixture to the sweet potatoes. Mix well and season with salt and pepper. 10 servings. This recipe can be doubled.
*You can use canned sweet potatoes if you are pressed for time. You will need approx. 7 cups mashed sweet potatoes.
