Chicken Salad

(after the chicken soup comes the chicken salad)
1 cooked chicken
¼ cup vinegar or lemon juice
¼ cup oil
2 tsp chopped onion
1 rib celery, diced
¾ cup mayonnaise
Salt and pepper
1 hard-cooked egg, dice (optional)

Cut chicken in bite-sized pieces and place in bowl. Add rest of ingredients and mix well. Serve on bed of lettuce.
Variations: You may add ½ cup chopped walnuts and /or 1 apple, diced; OR you may add ½ cup seeded, peeled and diced cucumber
