Broccoli Potato Kugel (pareve)

1 medium onion, diced
2 stalks celery, diced
3 tablespoons vegetable oil, more for greasing the pan
3 cloves garlic, chopped
2 large potatoes (about 2 pounds), peeled and boiled
6 large eggs
1/3 cup pesach mayonnaise
1/3 cup matzo meal
1 tablespoon salt
1/2 teaspoon ground pepper
2 pounds broccoli, cut into florets and cooked
4 tablespoons matzo meal.

Preheat oven to 350. Saute onion and celery in 2 to 3 tablespoons oil in a small frying pan over medium heat until browned. Add garlic and stir for a minute or two. Set aside. In large mixing bowl mash potatoes and stir in eggs, one by one,
incorporating well. Add the mayonnaise, matzo meal, salt and pepper, stirring
well. Fold in onion and broccoli. Grease a 9-by-13-inch baking pan and
spoon in mixture, spreading evenly. Sprinkle with matzo meal and paprika.
Bake for 50 minutes or until golden. Serves 8
