Cheese Blintzes
1 1/3 cups cake meal
1 tsp salt
3 cups water
6 eggs
Cheese Filling:
1 lb farmer cheese
2 eggs
¼ cup sugar
1 tsp salt
In a bowl, combine cake meal and salt. Add eggs and water, beating well. Some lumps will remain. Heat frying pan or griddle; grease lightly with margarine, butter or oil. Pour ¼ cup batter into pan, tilt and swirl to spread evenly. Frey until batter is set and looks dry. Turn over onto paper or cloth towel. Repeat with rest of batter.
For Cheese Instructions:
Mash cheese in bowl. Add other ingredients and put about 2 tbsp in center of each blintz. Fold one side over, fold in edges and roll up. Fry in a little melted butter or oil until browned on both sides.
