Tomato Cucumber Salad (pareve)

sea or kosher salt for sprinkling
6 tomatoes, seeded and chopped
4 green onions, sliced
3 to 4 radishes, finely diced
1 red bell pepper, seeded, deribbed, and finely diced
1/3 cup minced parsley
1 teaspoon lemon zest
1 tablespoon fresh lemon juice
2 tablespoons olive oil
Freshly ground black pepper to taste
Kalamata, black or nicoise olives for garnish
In a serving bowl, combine the cucumber, tomatoes, onions, parsley, lemon zest, olive oil, lemon juice. Toss to combine. Season with salt and pepper and toss again. Garnish with olives and serve. Serves 6 to 8.
