SPINACH PIZZA
2 pizza crusts, purchased or homemade
2 teaspoons garlic, minced
2 tablespoons butter
1/4 cup olive oil 1/3 cup white wine
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh basil
Topping:
1 large onion, sliced
1/2 cup water
8 ounces mozzarella cheese, shredded (2 cups)
8 ounces ricotta cheese
1 package (10-ounce) frozen chopped spinach, thawed and squeezed dry Dash of salt freshly ground pepper
Instructions:
Preheat oven to 425. In a saucepan melt the butter and oil together. Add the garlic and olive oil and cook until the garlic starts to turn lightly golden. At this point add the wine, rosemary and basil; simmer for 5 minutes then add the water and onions. Cook the onion with the water in a skillet, until they softened. Place the cooked onions on top of the pizza crusts. Place the mozzarella cheese, ricotta cheese and spinach on top of the onions and sprinkle the top of the pizza with salt and pepper. Bake for 15 minutes or until the cheese is melted and bubbly.
