SPICY PEANUT DIPPING SAUCE (pareve)
2 tablespoon peanut oil
1/2 onion, minced
2 tablespoon mince garlic
2 teaspoon minced ginger
1 tablespoon wine vinegar
1 tablespoon brown sugar 1/3 cup creamy peanut butter
1/2 teaspoon ground coriander
2 tablespoon ketchup
2 tablespoon soy sauce
1 tablespoon lemon juice
Dash hot sauce
Heat the oil in a small saucepan over low heat. Add the onion, garlic and ginger.
Cook and stir 5 minutes or until the vegetables are soft. Cook until sugar dissolves. Remove from heat and stir in peanut butter, coriander, ketchup, lemon and hot sauce. Blend until smooth, cover and refrigerate for at least 1 hour for the flavors to blend. Serve at room temperature.
Suggested dippers: miniature egg rolls or chicken
