SIMPLE CUCUMBER SOUP
2 large cucumbers
1/2 cup chopped green onions
1/2 teaspoon salt
1 teaspoon dried dill weed 2 cups plain yogurt
fresh dill
radish slices
Prepare cucumbers by peeling, cutting lengthwise in half, removing the seeds, and cutting into pieces Place the cucumbers and the green onions, salt, dill and yogurt in blender or food processor. Blend on high until well blended and smooth. Cover and refrigerate for at least 1 hour or until well chilled. Garnish with fresh dill and radish slices.
>Notes:This soup is gorgeous when served in a soup tureen. If desired, garnish the soup with fresh dill or fresh radish slices.
