Jack Daniels Barbecue Sauce

1/2 large onion, chopped
1 heaping tablespoon minced garlic
2 cup ketchup
1/3 cup vinegar
1/4 cup soy sauce
1/2 cup packed brown sugar
3/4 cup molasses
1/2 teaspoon pepper
1 teaspoon salt
1/4 cup tomato paste
2 teaspoon liquid smoke
1/2 teaspoon Tabasco sauce—to taste
1 cup Jack Daniels (or more) to taste
Combine onion, garlic and bourbon in a 3 qt saucepan. Saute until onion And garlic are translucent, about 10 min. Add the ketchup, vinegar, soy sauce brown sugar, molasses, pepper, salt, tomato paste liquid some and Tabasco sauce and bring the mixture to a boil, then turn down mixture to a medium simmer. Simmer for 20 min. stirring constantly. Cool and use immediately or cover and refrigerate for up to a week. You can run the sauce through a strainer if you want a smooth sauce.
