Honey Baked Chicken With Sesame Seeds

Contributed by Eileen Goltz

2 tablespoon sesame seeds
3 tablespoon honey
1/4 cup Dijon mustard
1/4 cup dry white wine
1 tablespoon lemon juice
3 boneless chicken breasts (about I lb. each) cut in half

Instructions:

Preheat oven to 400. Toast sesame seeds in a small frying pan over medium heat, shaking pan frequently, until golden (about 5 minutes). Transfer sesame seeds to a small bowl and blend in the honey, mustard, white wine and lemon juice. Arrange chicken breasts, slightly apart, in a 9 x 13 baking dish or pan. Pour sesame seed mixture evenly over chicken. Bake, uncovered for about 20 minutes basting several times with sesame seed mixture, until meat in thickest part is no longer pink when slashed ( you may need an additional 10 minutes or so of cook time depending on how thick the breasts are). Take chicken out and transfer to a platter or plates. Pour sauce into a small bowl to pass it along with the chicken. This is great over rice or noodles.
