1 pound lean ground beef
1/4 cup chopped onion
2 tablespoons vegetable oil
1 can (14.5 ounces) diced tomatoes
1 cup yellow cornmeal
3/4 cup whole kernel corn, canned or frozen and thawed
2 eggs, well beaten
1 tablespoons salt, or to taste
1/8 teaspoon pepper
1 teaspoon paprika
1 teaspoon chili powder

Instructions:

Preheat oven to 350. Grease a 9X5 loaf pan and set it aside. In a skillet, sauté onions in the oil until lightly browned. Add the tomatoes to the onions and bring the mixture to a boil. Add the cornmeal gradually; cook, stirring, for about 10 minutes. Remove from the heat. Add the corn, egg, salt, pepper, paprika, chili and meat. Blend thoroughly. Turn mixture into a greased loaf pan. Bake for 45 to 55 minutes.
