CHEESE SPREAD WITH DRIED FRUITS (dairy)
1 cup ricotta cheese
1 package (3 ounces) cream cheese
1/3 cup chopped toasted almonds
3 tablespoon brown sugar 1 tablespoon finely chopped dried apricots
1 tablespoon finely chopped pitted dates
1/2 teaspoon ground cinnamon
In a food processor combine the ricotta and cream cheese and process until smooth. Add the brown sugar and cinnamon and process to combine. Remove the mixture from the processor and place it in a bowl and add the almonds, apricots and dates. Mix to combine. Serve the spread with fruit, cookies or muffins. You can store the mixture in airtight container in the refrigerator for a week.
