Asian Nectarine Slaw (pareve)

1/4 cup vegetable oil
1/4 cup seasoned rice vinegar
1 tablespoon fresh ginger, finely minced
1 tablespoon soy sauce
For the slaw:
1 medium head Napa cabbage, (AKA Chinese cabbage) sliced thin
1 cup red cabbage, sliced thin
3 to 5 nectarines, rinsed and sliced into thin wedges
1/2 cup green onions, sliced diagonally
1/2 cup cashews, roughly chopped or broken
1/3 cup fresh cilantro or parsley, chopped
1/4 cup candied ginger, slivered fine
In a jar with a tight lid combine the oil rice vinegar ginger and soy sauce. Shake well to combine and then set it aside.? In a large salad bowl combine the cabbages, nectarines, green onion, cashews, cilantro and ginger. Toss once or twice to combine and then drizzle the dressing over the salad. Toss to coat and serve.
